I was wondering where I would edit the trinket bonus on for example http://wotlk.openwow.com/item=28830, It currently gives 325 haste, but I want it to give 1325 haste, could anyone explain where I edit it? :)

You need to make a custom spell that give 1325 haste.

As you can see in the pic below, using wow-v in advanced mode you need to choose a spell (in this example I have choose spell 43242 as an example)

So for your trinket, take spell.dbc, look for spell -> http://wotlk.openwow.com/spell=34774 (that its the spell that the trinket have), copy it and change 325 to 1325 or value that you want, then you have to put this new spell in the bonus of the trinket.

EDIT 1: Researching in spell.dbc, if you see column #116 of 34774 spell(using taliis) the trigger spell is 34775, so looking for it in the DBC and seeing column #80, the value is 324 (ingame it will be 325 of haste rating because in the dbc you have to use 'value -1' always).

To sum up a bit:
1- Trinket use spell 34774 as base spell and spell 34774 use 34775 as trigger spell.
2- Copy spell 34775, edit ID and value from 324 to 1324 (will be 1325 ingame)
3- Go to spell 34774, duplicate it, edit ID and trigger spell to the spell that you make in 2 step.
4- Go to wow-v create a trinket and use the spell that you make in step 4 (first picture)

Sorry my english, hope you have understand the little explanation.
Editing spells in the dbc if its your first time it will be a little difficult but dont worry, if you try and dont understand how this dbc works, reply to this post and give me your spell.dbc. I will make the spell and the SQL (trinket)
